Chicken Parm From Lady Bear

A Recipe From the Lady Bear

Feeding the hungry bear can be a difficult thing. Chicken Parmesan is an easy dinner to make and sure to please. It can be a quick and easy dinner, especially if there are two people to help. I recommend cooking the chicken in an iron skillet. It allows you to use one dish to cook the chicken, which means one less dish to wash!
Preheat the oven to 350. You will need about a cup of bread crumbs on a large plate, a raw egg whisked on a plate, and olive oil for the skillet.

Cut the chicken breast into one inch strips. Have one person coat the chicken with the egg, and then dip in the bread crumbs. Press the breadcrumbs into the chicken if it is not sticking. Put the chicken in the hot skillet, that is heavily coated in olive oil. Flip the chicken after a couple minutes. The idea is to get the outside crispy. It is helpful to have one person coating the chicken and another turning the chicken in the pan. Once done, put the entire skillet in the oven to finish cooking the chicken. This usually takes 15 minutes.
The last 5 minutes of cooking, sprinkle Parmesan cheese over all the chicken. The last 2 minutes, coat each piece with any pasta sauce. You can pair the chicken with pasta, broccoli, salad or bread.
